Ingredients
1/2 cup vegan mayonnaise
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried parsley
1/4 teaspoon sugar or maple syrup (optional, for sweetness)
Salt and black pepper to taste
2-3 tablespoons water (to adjust consistency)
Preparation
In a bowl, whisk together vegan mayonnaise, extra-virgin olive oil, red
wine vinegar, Dijon mustard, minced garlic, dried oregano, dried basil,
onion powder, dried thyme, dried rosemary, dried parsley, and sugar or
maple syrup if using.
Season the dressing with salt and black pepper to taste. Adjust the
sweetness or acidity if needed.
If the dressing is too thick, you can adjust the consistency by adding 2-3
tablespoons of water, one tablespoon at a time, until you reach your
desired thickness.
Refrigerate the dressing for at least 30 minutes before serving to allow the
flavors to meld.
Give the dressing a final stir before serving. Drizzle it over your favorite
salads, pasta salads, or use it as a dipping sauce for breadsticks.
