Strawberry Balsamic Vinaigrette

About the Recipe

Ingredients

1 cup fresh strawberries, hulled and halved

1/4 cup balsamic vinegar

2 tablespoons maple syrup or honey

1/4 cup extra-virgin olive oil

1 teaspoon Dijon mustard

Salt and black pepper to taste

Optional: 1 tablespoon chia seeds (for added thickness)

Preparation

  1. In a blender or food processor, blend fresh strawberries until smooth.

  2. Add balsamic vinegar, maple syrup or honey, extra-virgin olive oil, Dijon

    mustard, salt, and black pepper to the blended strawberries.

  3. Blend all the ingredients until you achieve a smooth and well-emulsified

    dressing.

  4. Taste the dressing and adjust sweetness or acidity by adding more maple

    syrup or balsamic vinegar as needed. If you prefer a thicker dressing, you

    can add chia seeds and let the dressing sit for a while to thicken.

  5. Refrigerate the dressing for at least 30 minutes before serving to allow the

    flavors to meld.

  6. Drizzle the Strawberry Balsamic Vinaigrette over salads with mixed

    greens, goat cheese, nuts, and additional fresh strawberries.
